Ingredients

  • 200g cherry tomatoes, chopped in quarters
  • 2 spring onions, chopped
  • 2 tsp garlic infused olive oil
  • 1 tsp apple cider vinegar
  • 4 tbsp pomegranate seeds
  • 2 tbsp chopped coriander leaves
  • 2 tbsp crumbed feta, plus extra to finish
  • Freshly ground black pepper

How to make

  1. Place all the ingredients in a bowl and toss to mix.
  2. Top your rice cakes and enjoy.
